Default NCAA Prospects with Strict Diets / Nutrition Regimens

I am very curious about the student athletes and their diet/nutrition, because in today's era the athletes are physically bigger than they actually were 10-15+ years ago. I also am aware that a lot of the star prospects will have personal chefs, trainers, etc. available to help them focus on staying healthy and fit.

The more intriguing question I have, is are there any active draft prospects heading into the process with strict vegan/vegetarian or pescatarian diets?

I really would like to dig deeper into this yearly, so that I can pay closer attention to how well they all train in pre-draft workouts, while seeing how the diet translates to performing at a high intensity level in a 17 Week regular season. Consistency in weight loss or gain throughout their careers may become a striking feat if this becomes notable at its earliest stage being the NCAA season/Combine process.

It isn't just the last 10-15 years...this evolution of size and speed has been happening since the Steelers started lifting weights in the 70's.

To give you an example of how far we have come, Megatron is considered to be the ultimate size/speed combo as a WR in today's game at 6'5" and 240 pounds. Rich Saul was one of the best centers in the NFL in the 70's...he was 6'3" and 240.
